One-Pan Veggie-Stuffed Stove Top Enchiladas
This recipe is adapted from one of my favorites, Rachael’s Good Eats. I love enchiladas and am always looking for ways to incorporate Tex-Mex style foods into our meal rotation. This one-pan recipe is super easy, and there’s hardly any cleanup since it’s all in one pan. It’s perfect for a quick weeknight meal!

Cuisine: Tex-Mex, one-pan dinner
- 1 lb Chorizo (or beef, or shredded chicken, or tofu)
- ½ can red enchilada sauce (I use Siete from Whole Foods)
- ½ cup red onion, finely diced
- ½ red bell pepper, roughly chopped
- ½ orange bell pepper, roughly chopped
- 1 zucchini, sliced into quarters (around 1 inch thick)
- 1 cup canned corn
- 1 cup black beans (no salt added)
- 4 oz sliced mushrooms (I use baby bella)
- 2 tbsp cooking oil (I use avocado oil)
- 1 tsp chipotle powder
- 1 tsp garlic powder
- 4 garlic cloves, minced
- 1 jalapeno (seeds can be removed or not)
- 1 sliced avocado, for garnish
- 1 bunch cilantro, finely minced for garnish
- Goat cheese, sprinkled for garnish (optional)
- Tortilla chips for dipping (optional)
- Heat 2 tbsp cooking oil (I use avocado oil) in a large saucepan on medium heat.
- Cook your desired protein on the stovetop until it’s cooked all the way through (unless you’re using chicken, in which case you should bake it this way).
- Add in the onion and saute for about 4-5 minutes, until translucent.
- Add in the minced garlic and spices and saute for about 1 minute.
- Add in the red and orange bell pepper, zucchini, jalapeno, and mushrooms and saute for about 3-4 minutes.
- Add in the black beans, corn, and enchilada sauce together and reduce the heat to low. Cover the saute pan and allow the mixture to simmer for about 10 minutes, stirring occasionally.
- Remove the saucepan from the heat and add the sliced avocado + sprinkle the goat cheese and cilantro on top.
- Serve and enjoy with tortilla chips!
